New Year, New Openings in Downtown Bellevue

With the arrival of the new year comes the anticipation of new openings! In 2025 and the near future, Downtown Bellevue will see an influx of new (and returning) businesses for shoppers, foodies, and beverage connoisseurs alike.  

Shopping

Barnes & Noble

Just two years after the closure of its longtime Bellevue location, Barnes & Noble is set to return to a brand new space in early 2025! The national bookseller has experienced a major resurgence in recent years with increased demand for physical book copies and is ready to spread the love back to Downtown Bellevue. Here you can find books of every genre of book, toys, games, music, and gifts for loved ones.

H&M

Global fast-fashion giant H&M enters the Downtown Bellevue scene, poised to occupy the space that previously held 365 by Whole Foods and JCPenney. The retailer is known for its affordability and trendy items including clothes, shoes, accessories, and homeware. H&M's new Bellevue Square location will fill a brightly lit, open space with men's and women's clothing for any occasion.

Reformation

The Los Angeles-based women's retailer is known for its sustainable and transparent practices, using vintage, regenerative, and recycled fabrics to craft one-of-a-kind pieces that embody an "effortlessly chic" style. This will be the brand's second physical store in Washington offering a curated assortment of items supplemented by a modern, digital shopping experience.

Food & Beverage

Hello Robin

Need a pick-me-up to brighten up those gloomy winter days? Seattle favorite Hello Robin will be bringing just that with a bright and cheery space filled with the aroma of freshly baked cookies. Get ready to choose from a selection of flavors such as birthday cake, brown butter snickerdoodle, salted butterscotch, and s'more. The shop will also offer seasonal specialities and shareable cookie cakes. 

Mendocino Farms

Mendocino Farms, known by loyal fans as Mendo, is gearing up to be the new go-to lunch spot of Bellevueites as they continue to expand their Eastside presence. Known for their locally sourced ingredients and healthy menu options, the fast casual chain prioritizes meals that are both fresh and flavorful. Fans recommend their "Not So Fried" Chicken Sandwich and Pink Lady Beets & Goat Cheese Salad.

OMO Thai Tea

Thai tea lovers will enjoy Mari Bellevue's upcoming opening, which will feature soft serve and Thai tea made from Ceylon black tea, milk, and sugar. This blend of tradition with a modern twist will be featured in an innovative storefront inspired by local street retail in Asia, creating an "outside-in" experience.

TOASTED.

Mediterranean-inspired cafe TOASTED. was met with great enthusiasm when the first location opened in 2024. The announcement of their expansion came soon after, and Downtown Bellevue will now be introduced to the shop's impressive menu of bagel sandwiches, tea, and coffee drinks. The founders incorporate Mediterranean flavors including labneh, hummus, and dates into sweet and savory bites.

R+M Dessert Bar

Chef duo Rod Gambassi and Marc Adams are bringing their conceptual dessert bar to the heart of Bellevue. The locale will offer artisanal dessert and wine pairings to-go for a quick bite, along with a space for specialty dine-in experiences featuring gourmet chef's menus and decadent sweets. There will also be a private dining area for large groups wanting a curated experience.

Shoo Loong Kan

The newly built West Main in Downtown Bellevue is quickly becoming a mecca for international cuisine, and its new addition, Shoo Loong Kan, is just that. The Chinese-based Sichuan-style hot pot restaurant will occupy a 5,000 sq. ft. space outfitted with a huge 3D dragon mural, the chain's emblem. Each dish incorporates traditional Chinese flavors and cooking methods to bring a taste of Sichuan to your plate.

Sizzle & Crunch Vietnamese Grill

Seattle staple Sizzle & Crunch is making its way to the Eastside! The made-to-order Vietnamese fast-casual joint offers a varied menu including crunchy banh mi, rice bowls, vermicelli bowls, and salad bowls. Their house-made marinades are to die for, and they're proud to offer vegetarian, vegan and gluten free options to accommodate any dietary restrictions.
