Sabine Café to Open in Early 2026

SABINE CAFÉ TO OPEN FIRST EASTSIDE LOCATION IN DOWNTOWN BELLEVUE
Located in The Eight office tower, this will be the Mediterranean-inspired all-day café’s second location

A new cafe is coming soon! Sabine Café will open early 2026 at The Eight, a 25-story office tower in the heart of Downtown Bellevue. The 3,000-square-foot restaurant will be located on the ground floor and offer 50 seats for indoor dining, outdoor seating on the plaza to enjoy during warmer months and  private dining spaces for celebrations and group gatherings.

Sabine Cafe is housed under Yes Parade Restaurant Group, a Seattle-based hospitality group with seven restaurants throughout the Puget Sound region. Sabine opened in Ballard in 2020 and quickly became a beloved addition to the community. Their opening at The Eight will mark Yes Parade’s first expansion into the Eastside.

“We’ve been so pleased by the reception of Sabine in Ballard and are thrilled by the opportunity to introduce the restaurant to the Eastside,” said general manager and operating partner Kathryn Meyer. “Every element is a labor of love, from the coffee and wine programs to the baking and fresh, seasonal menu curated by Chef Jacob. We can’t wait to introduce ourselves to Bellevue.”

An all-day cafe, bar and bakery, Sabine’s menu has been crafted by executive chef and operating partner Jacob Dunkelberger, drawing inspiration from Mediterranean and Middle Eastern cuisine heavily influenced by the seasonality of the Pacific Northwest. Dedicated to supporting local farms, foragers and producers, they prioritize using local, in-season and organic ingredients. Sabine Café Bellevue will feature a top-tier coffee program, house-baked breads and pastries, and signature dishes from its brunch menu in addition to a robust menu of grab-and-go options – all designed for dining in or enjoying deskside.

Sabine Café was founded during a time of adaptation following the pandemic of 2020. With a revitalized vision for the space, the restaurant opened as part of Yes Parade Restaurant Group where they continue to  transform the venue into a place for community gathering in Seattle’s vibrant Ballard neighborhood -- and soon, in Downtown Bellevue.
